Description

Zesty Lemon Scones are buttery, soft, and bursting with fresh lemon flavor 🍋. They’re perfect for breakfast, brunch, or an afternoon tea treat. With just a few pantry staples and a hint of citrus, you’ll have golden scones on the table in under 30 minutes!

Ingredients

Scale

2 cups all-purpose flour

1/2 cup granulated sugar

  1 tbsp baking powder

1/2 tsp salt

1/2 cup cold unsalted butter, cubed

1/2 cup heavy cream

1 tbsp lemon zest

1 tbsp lemon juice

  1 egg

Optional: Additional sugar for topping

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the cream, lemon zest, lemon juice, and egg.

Pour the wet ingredients into the dry mixture and stir until just combined—do not overmix.

Turn the dough out onto a floured surface and gently knead it a few times until it comes together.

Shape into a 1-inch thick round disc. Cut into 8 wedges or use a biscuit cutter for round scones.

Place scones onto the prepared baking sheet. Sprinkle tops with a little sugar if desired.

Bake for 15–20 minutes or until golden brown and set in the center.

Let cool slightly before serving warm.

Notes

For extra lemon punch, drizzle with a lemon glaze made from powdered sugar and lemon juice.

Keep your butter very cold for the best flaky texture.

Don’t overwork the dough, scones should be tender, not tough!

Optional add-ins: 1/2 cup blueberries, poppy seeds, or white chocolate chips.
