- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 large egg
- 1 teaspoon almond extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- A pinch of salt
- Your choice of jam (raspberry, apricot, etc.)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter and powdered sugar until light and fluffy.
- Beat in the egg and almond extract until well blended.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized pieces of dough and roll them into finger shapes.
- Create fine indentations to mimic skin texture and press a blanched almond at the tip.
- Create an indentation in the middle of each finger.
- Place the cookies on the baking sheet with enough space between them.
- Bake for about 12-15 minutes or until the edges turn lightly golden.
- Let them cool for a minute before adding a dollop of jam into the indentation of each cookie.
- Allow them to cool completely before indulging!
Notes
Chill the dough for 30 minutes before shaping to maintain the finger-like appearance. Use a thicker fruit preserve to prevent runny jam fillings.
