Description

A comforting and nutritious sauté combining nutty wild rice and sweet potatoes, perfect for a weeknight dinner or festive gatherings.


Ingredients

  • 1 cup wild rice
  • 2 medium-sized sweet potatoes, peeled and diced
  • 2 tablespoons olive oil or butter
  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 2 cups vegetable broth
  • 12 tablespoons fresh herbs (thyme or sage), chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water to remove any surface starches.
  2. In a medium saucepan, combine rinsed wild rice and vegetable broth. Bring to a boil, reduce to a simmer, cover, and cook for about 45-60 minutes or until tender but chewy.
  3. In a large skillet, heat olive oil or butter over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add garlic and stir for another minute.
  4. Toss in the diced sweet potatoes, seasoning with salt and pepper. Cook until they start to soften, about 10-12 minutes.
  5. Once the wild rice is ready, fold it into the sautéed mixture. Stir in fresh herbs and adjust seasoning. Heat through for another 5 minutes.
  6. Serve warm, garnished with additional herbs or a sprinkle of feta cheese if desired.

Notes

For added flavor, use homemade vegetable broth. Adjust the cooking time of the sweet potatoes for your desired tenderness.
