A comforting and nutritious sauté combining nutty wild rice and sweet potatoes, perfect for a weeknight dinner or festive gatherings.

- 1 cup wild rice
- 2 medium-sized sweet potatoes, peeled and diced
- 2 tablespoons olive oil or butter
- 1 medium onion, diced
- 2–3 cloves garlic, minced
- 2 cups vegetable broth
- 1–2 tablespoons fresh herbs (thyme or sage), chopped
- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water to remove any surface starches.
- In a medium saucepan, combine rinsed wild rice and vegetable broth. Bring to a boil, reduce to a simmer, cover, and cook for about 45-60 minutes or until tender but chewy.
- In a large skillet, heat olive oil or butter over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add garlic and stir for another minute.
- Toss in the diced sweet potatoes, seasoning with salt and pepper. Cook until they start to soften, about 10-12 minutes.
- Once the wild rice is ready, fold it into the sautéed mixture. Stir in fresh herbs and adjust seasoning. Heat through for another 5 minutes.
- Serve warm, garnished with additional herbs or a sprinkle of feta cheese if desired.
Notes
For added flavor, use homemade vegetable broth. Adjust the cooking time of the sweet potatoes for your desired tenderness.
