Instructions
- Melt the chocolate: In a heatproof bowl, combine the white chocolate and heavy cream. Place it over a pot of simmering water and stir until smooth.
- Add flavors: Remove from heat and gently stir in lemon zest, lemon juice, and vanilla extract until well combined.
- Chill the mixture: Cover and refrigerate for about 2 hours or until firm.
- Shape the truffles: Scoop out small portions and roll into balls, coating with crushed nuts or powdered sugar if desired.
- Coat with chocolate: Optionally, dip each truffle in melted white chocolate and let set on parchment paper.
Notes
For a dairy-free version, substitute heavy cream with coconut cream. Be careful with the chocolate melting process to avoid scorching.
