  • Day-old brioche or sourdough bread, torn into chunks
  • Fresh ripe pears, peeled and diced
  • 3 large eggs
  • 2 cups whole milk or heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp ground cardamom
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. Tear the bread into chunks and spread it evenly across the dish.
  3. In a bowl, whisk together eggs, whole milk (or heavy cream), both sugars, ground cardamom, cinnamon, and vanilla extract until well blended.
  4. Fold in the diced pears and pour the custard mixture over the top, ensuring everything is evenly coated.
  5. Let the mixture sit for 15-30 minutes to soak.
  6. Bake for 40-50 minutes, or until the top is golden and the custard is set.
  7. Serve warm, optionally with powdered sugar or maple syrup.
