Ingredients

- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- A pinch of nutmeg
- 2 cups milk (dairy or plant-based)
- 2 eggs
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 2–3 cups apples (chopped)
- 1 cup chopped walnuts or pecans
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, baking powder, cinnamon, and nutmeg.
- In a separate bowl, whisk together milk, eggs, brown sugar, and maple syrup until well blended.
- Chop the apples and add them to the oat mixture along with the chopped nuts.
- Pour the wet ingredients into the dry mixture and stir until just moistened; do not overmix.
- Pour the mixture into a greased 9×13-inch baking dish and sprinkle the top with additional brown sugar.
- Bake for 30-35 minutes or until the top is golden brown and set.
- Allow to cool for a few minutes before serving.
Notes
For extra flavor, serve warm with a dollop of yogurt or a splash of cream.
