- 1 avocado
- 2 eggs

Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch thick slices.
- Place the slices on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Bake in the oven for about 25-30 minutes, flipping halfway through, until tender and slightly crisp.
- While the sweet potatoes are baking, poach or fry the eggs to your liking.
- Mash the avocado in a bowl and add a squeeze of lemon juice, salt, and pepper.
- Once the sweet potatoes are done, top each slice with mashed avocado and a cooked egg.
- Sprinkle with red pepper flakes if desired, and serve immediately.
