- 4 large sweet potatoes
- 1/2 cup butter
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla extract
- Salt, to taste
- 1 cup chopped pecans (or mini marshmallows) for topping
Instructions
- Peel and cube the sweet potatoes.
- Boil the sweet potatoes in salted water until fork-tender.
- Mash the sweet potatoes with butter, brown sugar, cinnamon, nutmeg, salt, and vanilla extract until smooth.
- Mix chopped pecans with brown sugar and butter for the topping.
- Spread the topping evenly over the mashed sweet potatoes in a baking dish.
- Bake at 350°F (175°C) for about 30 minutes or until golden and bubbly.
- Let cool slightly before serving.
Notes
For a vegan version, substitute brown sugar with coconut sugar and use plant-based butter. Avoid over-boiling sweet potatoes to maintain texture.
