Ingredients
- Fresh salmon fillets (skinless)
- Cream cheese
- Sautéed mushrooms (cremini or button)
- Fresh herbs (dill, parsley, or chives)
- Garlic (fresh or garlic powder)
- Lemon juice and zest
- Salt and pepper
- Optional: Spinach
Instructions
- Prepare the salmon fillets, evenly pound if thicker.
- Sauté the mushrooms in a skillet until golden, add garlic, then mix with cream cheese, herbs, lemon juice, salt, and pepper.
- Spread the mixture on the salmon, adding spinach if desired, and roll tightly.
- Slice into 1-2 inch pieces and cook on medium heat for 3-5 minutes per side or bake at 375°F (190°C) for 15-20 minutes.
- Plate with a slice of lemon or herb garnish and serve.
