Description

Delightful crispy nests filled with creamy mashed potatoes, cheese, and optional bits of bacon or ham, perfect as an appetizer or side dish.


Ingredients

  • 4 large potatoes
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 cup shredded cheese
  • 1/2 cup cooked bacon or ham (optional)
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Breadcrumbs (for coating)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and boil the potatoes until fork-tender.
  3. Drain and mash the potatoes with the milk and butter, seasoning with salt and pepper.
  4. Stir in the shredded cheese, bacon or ham, and chopped green onions.
  5. Grease a muffin tin and fill each cup with the potato mixture, forming nests in the centers.
  6. Sprinkle breadcrumbs on top of each nest.
  7. Bake for 20-25 minutes until golden and crispy.
  8. Let cool slightly before serving.

Notes

These nests can be made ahead and stored in an airtight container for up to 3 days. Reheat in the oven to restore crispiness.
