- 4 large potatoes
- 1/2 cup milk
- 4 tablespoons butter
- 1 cup shredded cheese
- 1/2 cup cooked bacon or ham (optional)
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Breadcrumbs (for coating)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and boil the potatoes until fork-tender.
- Drain and mash the potatoes with the milk and butter, seasoning with salt and pepper.
- Stir in the shredded cheese, bacon or ham, and chopped green onions.
- Grease a muffin tin and fill each cup with the potato mixture, forming nests in the centers.
- Sprinkle breadcrumbs on top of each nest.
- Bake for 20-25 minutes until golden and crispy.
- Let cool slightly before serving.
Notes
These nests can be made ahead and stored in an airtight container for up to 3 days. Reheat in the oven to restore crispiness.
