- 2 chicken breasts
- 4 oz cream cheese
- 1/2 cup spinach (cooked and chopped)
- 1/2 cup shredded cheese (e.g., mozzarella or cheddar)
- 6 slices of bacon
- Salt and pepper to taste
- Olive oil (for cooking)
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the cream cheese, cooked spinach, and shredded cheese in a bowl until well combined.
- Season the chicken breasts with salt and pepper.
- Create a pocket in each chicken breast with a sharp knife.
- Stuff the cream cheese mixture into the pockets of each chicken breast.
- Wrap each stuffed chicken breast with slices of bacon.
- Sear the bacon-wrapped chicken in a skillet over medium-high heat until crispy.
- Transfer the chicken to a baking dish and bake for 20-25 minutes.
- Rest the chicken for a few minutes before slicing and serving.
Notes
Make sure to seal the pocket well to prevent filling from oozing out during cooking. Leftovers can be stored in an airtight container for up to 3 days. Allow resting after baking for juicy chicken.
