Ingredients

  • 2 cups fresh strawberries, sliced
  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1 cup heavy whipping cream
  • 1 package graham crackers
  • 1 tablespoon sugar (for strawberries)
  • Optional: Mint sprigs for garnish

Instructions

  1. Slice fresh strawberries and sprinkle with a tablespoon of sugar. Let them rest for 30 minutes to draw out the juices.
  2. In a bowl, beat together cream cheese and sugar until smooth. Fold in whipped cream until well combined.
  3. In a rectangular dish, start with a layer of graham crackers, followed by a layer of cream cheese mixture, and then a layer of strawberries. Repeat the process until all ingredients are used, finishing with strawberries on top.
  4. Refrigerate for at least 4 hours, preferably overnight, allowing the flavors to meld and the cake to set.
  5. Slice and serve chilled, garnished with a mint sprig for an added touch.
