Description

Festive stacked cookies topped with colorful sprinkles and creamy frosting, perfect for holiday gatherings.


Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Sprinkles, for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the butter, granulated sugar, and brown sugar until fluffy and light (3-5 minutes).
  3. Add the egg and vanilla extract, mixing until just combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until no flour streaks remain.
  5. Using a cookie scoop, portion out the dough onto the prepared sheets, spacing them about 2 inches apart. Bake for 10-12 minutes until the edges are lightly golden.
  6. Allow the cookies to cool for a couple of minutes before transferring them to a wire rack. Frost the tops of half the cookies and stack them with the un-frosted halves, pressing gently to adhere.
  7. Generously cover the tops with colorful sprinkles.

Notes

For a vegan version, substitute coconut oil or dairy-free butter. Use almond extract for added flavor and gluten-free flour if needed.
