- 1 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Sprinkles, for decoration
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, beat the butter, granulated sugar, and brown sugar until fluffy and light (3-5 minutes).
- Add the egg and vanilla extract, mixing until just combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until no flour streaks remain.
- Using a cookie scoop, portion out the dough onto the prepared sheets, spacing them about 2 inches apart. Bake for 10-12 minutes until the edges are lightly golden.
- Allow the cookies to cool for a couple of minutes before transferring them to a wire rack. Frost the tops of half the cookies and stack them with the un-frosted halves, pressing gently to adhere.
- Generously cover the tops with colorful sprinkles.
Notes
For a vegan version, substitute coconut oil or dairy-free butter. Use almond extract for added flavor and gluten-free flour if needed.
