Ingredients
2 cups sprouted wheat flour
1 cup bread flour
1 cup water (filtered)
1/4 cup active sourdough starter
1 tsp sea salt
Instructions
1. Feed your sourdough starter the night before.
2. Mix sprouted flour, bread flour, water, and salt in a bowl.
3. Let the dough rest and bulk ferment for 4–6 hours, folding every 30–45 minutes.
4. Shape the dough and proof in the fridge for 8–12 hours.
5. Bake in a Dutch oven at 475°F for 20 minutes covered, then 25 minutes uncovered.
Notes
Use fresh sprouted flour for the best results.
Sprouted dough ferments faster than regular dough; monitor rise closely.
Store in a paper bag or freeze sliced for longer freshness.
