- 3 cups all-purpose flour (or whole wheat)
- 1 cup chopped cremini or shiitake mushrooms
- 2 cloves fresh garlic, minced
- 1/4 cup butter, melted (or olive oil for a lighter option)
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 teaspoon salt
- 1 cup warm water
Instructions
- Sauté chopped mushrooms and minced garlic in melted butter until golden brown; season with salt, pepper, and half of the herbs. Set aside to cool.
- In a large bowl, combine flour, yeast, and remaining herbs. Create a well in the center and pour in warm water and melted butter.
- Stir until a shaggy dough forms, then transfer to a floured surface and knead for about 10 minutes until smooth and elastic.
- Add cooled mushroom mixture towards the end of kneading to evenly distribute.
- Place dough in a greased bowl, cover with a damp cloth, and let rise until doubled in size (about 1 to 1.5 hours).
- Punch down the dough, shape it into a loaf, and let it rise again on a lined baking sheet for 30 minutes.
- Preheat oven to 375°F (190°C). Create spooky designs on the top with a knife, then bake for 25-30 minutes until golden brown and the crust sounds hollow.
- Cool on a wire rack before slicing.
