Ingredients

- 2 cups fresh baby spinach
- 1 cup ricotta cheese
- 2 cloves garlic, minced
- 1/2 cup shredded mozzarella or Parmesan cheese
- 1 egg, beaten
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- Puff pastry or phyllo dough
- Olive oil or egg wash for brushing
Instructions
- Prep the spinach: Sauté in olive oil over medium heat until wilted, then cool and finely chop.
- Make the filling: Mix ricotta, sautéed spinach, minced garlic, shredded cheese, beaten egg, nutmeg, salt, and pepper in a bowl.
- Prepare the dough: Roll out puff pastry or phyllo dough and cut into squares.
- Stuff the bites: Place filling in the center of each square and fold into triangles.
- Brush with olive oil or egg wash and bake at 375°F (190°C) for 20–25 minutes until golden.
- Serve warm with your favorite dipping sauce.
