Delicious and comforting Spinach Ricotta Bites perfect for family gatherings and parties.


Ingredients

  • 2 cups fresh baby spinach
  • 1 cup ricotta cheese
  • 2 cloves garlic, minced
  • 1/2 cup shredded mozzarella or Parmesan cheese
  • 1 egg, beaten
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Puff pastry or phyllo dough
  • Olive oil or egg wash for brushing

Instructions

  1. Prep the spinach: Sauté in olive oil over medium heat until wilted, then cool and finely chop.
  2. Make the filling: Mix ricotta, sautéed spinach, minced garlic, shredded cheese, beaten egg, nutmeg, salt, and pepper in a bowl.
  3. Prepare the dough: Roll out puff pastry or phyllo dough and cut into squares.
  4. Stuff the bites: Place filling in the center of each square and fold into triangles.
  5. Brush with olive oil or egg wash and bake at 375°F (190°C) for 20–25 minutes until golden.
  6. Serve warm with your favorite dipping sauce.

Notes

Experiment with flavored oils for dipping and avoid overcrowding the baking sheet.
