- 1 store-bought or homemade pie crust
- 2 cups fresh spinach (or kale/Swiss chard)
- 1 cup crumbled feta cheese (or goat cheese/ricotta)
- 4 large eggs
- 1 cup milk or cream (or half-and-half/non-dairy alternative)
- 2 cloves garlic, minced
- Fresh or dried herbs (dill, parsley, nutmeg)
- Salt and pepper to taste
- Optional: mushrooms, bell peppers, sun-dried tomatoes
Instructions
- Preheat oven to 375°F (190°C).
- Prepare the crust by rolling it out and pre-baking for 10 minutes.
- Sauté minced garlic in olive oil, then add spinach and cook until wilted (about 3 minutes). Set aside to cool.
- In a mixing bowl, whisk eggs, milk, and feta, then stir in cooled spinach and any optional ingredients.
- Pour mixture into pre-baked crust and bake for 30-35 minutes until filling is set and golden.
- Allow to cool before slicing and serving warm or at room temperature.
Notes
