Description

Delicate and enchanting crepes that create beautiful patterns, perfect for both savory and sweet fillings.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups milk (or a plant-based alternative)
  • 2 tablespoons melted butter (or olive oil)
  • A pinch of salt
  • Fresh mushrooms (cremini or shiitake)
  • Garlic, sautéed
  • Fresh herbs (thyme or parsley)
  • Cheese (goat cheese or Gruyère)

Instructions

  1. In a large mixing bowl, whisk together the flour and eggs. Gradually incorporate the milk and melted butter until the mixture is smooth and free of lumps. Allow the batter to rest for about 30 minutes.
  2. Preheat a non-stick skillet over medium heat and add a small knob of butter.
  3. Pour about a half-cup of batter into the skillet, swirling it gently to create a thin, even layer.
  4. Cook for 1-2 minutes until golden, then flip and cook the other side for another minute.
  5. Continue the process until all the batter is used, stacking the crepes on a plate to keep warm.
  6. Fill each crepe with your desired savory or sweet fillings, folding them gently before plating.

Notes

For a lighter version, use olive oil instead of melted butter. Allow the batter to rest for a tender texture.
