- 1/4 cup honey
- 1 tsp chili flakes
- 2 cloves garlic, minced
- 4 cups mixed greens (arugula, spinach, romaine)
- 1 cup bell peppers, sliced
- 1 cup cucumbers, sliced
- 1 cup carrots, shredded
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Begin by marinating your chicken. In a bowl, mix honey, olive oil, minced garlic, chili flakes, salt, and pepper. Coat the chicken pieces thoroughly and let them marinate for at least 30 minutes.
- Preheat your grill or skillet over medium-high heat. For maximum flavor, grill the chicken until it’s golden brown and cooked through, about 6-7 minutes per side.
- While the chicken cooks, prepare your salad base. In a large bowl, combine your mixed greens and toss in sliced bell peppers, cucumbers, and shredded carrots.
- Once the chicken is done, let it rest for a few minutes before slicing it into strips.
- For the dressing, whisk together more honey, lemon juice, and olive oil, adding chili flakes to taste.
- Toss the salad with the dressing and top it off with the warm slices of chicken. Garnish with fresh herbs or nuts for an added touch.
