- 1 pound shrimp, peeled and deveined
- 4 cups chicken broth
- 1 cup stone-ground grits
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 diced onion
- 1 diced bell pepper
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 splash heavy cream
- Fresh parsley, for garnish
- Salt, to taste
- Lemon juice, to taste
Instructions
- In a medium pot, bring chicken broth to a simmer. Gradually whisk in grits and a pinch of salt, simmer for 20-25 minutes, stirring often. Stir in butter and cream before serving.
- In a skillet, heat olive oil, add onions and bell peppers, and sauté for about 5 minutes.
- Add minced garlic and sauté for an additional minute.
- Stir in shrimp and Cajun seasoning, cooking until shrimp are pink and opaque, about 5 minutes.
- Remove from heat, add lemon juice, and serve over grits, garnished with parsley.
Notes
For a lighter version, use vegetable broth instead of chicken broth and reduce butter and cream. Adjust the spice level of Cajun seasoning to your preference.
