Description

A comforting dish featuring spicy shrimp served over creamy, buttery grits, perfect for any gathering.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 cups chicken broth
  • 1 cup stone-ground grits
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 diced onion
  • 1 diced bell pepper
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 splash heavy cream
  • Fresh parsley, for garnish
  • Salt, to taste
  • Lemon juice, to taste

Instructions

  1. In a medium pot, bring chicken broth to a simmer. Gradually whisk in grits and a pinch of salt, simmer for 20-25 minutes, stirring often. Stir in butter and cream before serving.
  2. In a skillet, heat olive oil, add onions and bell peppers, and sauté for about 5 minutes.
  3. Add minced garlic and sauté for an additional minute.
  4. Stir in shrimp and Cajun seasoning, cooking until shrimp are pink and opaque, about 5 minutes.
  5. Remove from heat, add lemon juice, and serve over grits, garnished with parsley.

Notes

For a lighter version, use vegetable broth instead of chicken broth and reduce butter and cream. Adjust the spice level of Cajun seasoning to your preference.
