- 1 cup granulated sugar
- ½ cup packed light brown sugar
- ½ cup vegetable oil
- 3 large eggs
- 1 cup apple cider
- 1 teaspoon vanilla extract
- 1 cup peeled and diced apples (recommended Granny Smith)
- Powdered sugar for glazing
Instructions
- Preheat your oven to 350°F (175°C). Grease your Bundt pan and dust it with flour.
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and allspice.
- In another bowl, mix granulated sugar and brown sugar with vegetable oil until combined. Beat in eggs, one at a time, then stir in apple cider and vanilla extract.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Fold in the diced apples.
- Pour the batter into the prepared Bundt pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Let the cake cool for 15 minutes before inverting it onto a wire rack. Drizzle with a glaze made from powdered sugar and apple cider.

Make sure to use room temperature ingredients for a smoother batter. Avoid overmixing for a tender cake.
