Description

A vibrant and flavorful salad featuring grilled chicken, fresh vegetables, and a tangy yogurt dressing.


Ingredients

  • 2 chicken breasts, marinated
  • 4 cups romaine lettuce, chopped
  • 1 cup sweet corn
  • 1 cup black beans
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 avocado, sliced
  • 1/2 cup queso fresco or cheddar cheese
  • 1/2 cup plain yogurt
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate chicken breasts in olive oil, garlic, cumin, and paprika for at least an hour.
  2. Grill the chicken for 6-7 minutes per side until cooked through.
  3. Chop the greens, bell peppers, and avocado into bite-sized pieces.
  4. In a bowl, whisk together yogurt, lime juice, cilantro, salt, and pepper for the dressing.
  5. Once the chicken is cool, slice it into strips.
  6. In a large bowl, combine chopped greens, vegetables, black beans, corn, and chicken.
  7. Drizzle dressing over the salad and toss gently.
  8. Top with avocado and cheese, serve chilled or at room temperature.

Notes

Taste and adjust seasoning as needed. Avoid overcooking the chicken for best results.
