- 2 chicken breasts, marinated
- 4 cups romaine lettuce, chopped
- 1 cup sweet corn
- 1 cup black beans
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 avocado, sliced
- 1/2 cup queso fresco or cheddar cheese
- 1/2 cup plain yogurt
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Marinate chicken breasts in olive oil, garlic, cumin, and paprika for at least an hour.
- Grill the chicken for 6-7 minutes per side until cooked through.
- Chop the greens, bell peppers, and avocado into bite-sized pieces.
- In a bowl, whisk together yogurt, lime juice, cilantro, salt, and pepper for the dressing.
- Once the chicken is cool, slice it into strips.
- In a large bowl, combine chopped greens, vegetables, black beans, corn, and chicken.
- Drizzle dressing over the salad and toss gently.
- Top with avocado and cheese, serve chilled or at room temperature.
