Ingredients

  • 4 cups of mashed sweet potatoes
  • 1/2 cup of good-quality maple syrup
  • 1/4 cup of melted butter
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon each of cinnamon and nutmeg
  • Salt to taste
  • 1 cup of pecans, chopped
  • 1 tablespoon of brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes with maple syrup, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix until smooth and well-blended.
  3. Pour the mixture into a greased baking dish, spreading it evenly.
  4. In a separate bowl, combine the chopped pecans and brown sugar. Sprinkle this over the sweet potato mixture.
  5. Bake for 30-35 minutes until the topping is golden and the casserole has set slightly.

Notes

For a dairy-free version, substitute coconut oil for melted butter. For a nut-free option, use oats as a topping instead of pecans.
