- 4 cups of mashed sweet potatoes
- 1/2 cup of good-quality maple syrup
- 1/4 cup of melted butter
- 2 large eggs

- 1 cup of pecans, chopped
- 1 tablespoon of brown sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed sweet potatoes with maple syrup, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix until smooth and well-blended.
- Pour the mixture into a greased baking dish, spreading it evenly.
- In a separate bowl, combine the chopped pecans and brown sugar. Sprinkle this over the sweet potato mixture.
- Bake for 30-35 minutes until the topping is golden and the casserole has set slightly.
Notes
For a dairy-free version, substitute coconut oil for melted butter. For a nut-free option, use oats as a topping instead of pecans.
