- 3 cups high-quality flour
- 1 cup water
- 1 tsp salt
- 2 tbsp olive oil
- 2 cups whole-milk mozzarella, shredded
- 1 cup thick tomato sauce or crushed San Marzano tomatoes
- 1 cup sautéed mushrooms
- 1/2 cup caramelized onions
- 1/2 cup thinly sliced pepperoni (optional)
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
- Flaky sea salt for sprinkling
Instructions
- Feed your sourdough starter to make it lively and bubbly.
- Mix flour, water, and a pinch of salt in a bowl until a rough dough forms.
- Add active starter and knead until smooth and elastic.
- Cover and let the dough ferment until it rises noticeably.
- Prepare the filling by sautéing mushrooms in olive oil until golden and releasing liquid.
- Add minced garlic and briefly cook.
- Stir in tomato sauce and let it reduce until thick. Season as desired.
- Shred the mozzarella and grate the Parmesan.
- Divide risen dough into equal portions, flatten into discs, and place filling in the center.
- Fold dough over the filling, pinch seams closed, and shape into balls.
- Arrange on a parchment-lined tray, seam-side down, and brush with olive oil. Sprinkle with sea salt and Parmesan.
- Bake in a preheated oven until golden and filling bubbles. Cool slightly before serving.
Notes
For a crisper bottom, bake on a preheated baking steel or heavy sheet. Use steam in the first minutes of baking for better crust expansion.
