Description

Delicious and resourceful cinnamon sugar twists made from sourdough discard, perfect for breakfast or as a snack.


Ingredients

  • 1 cup sourdough discard
  • 2 cups all-purpose flour
  • 1/2 cup softened butter
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 egg (for egg wash)
  • 1/2 teaspoon salt

Instructions

  1. In a mixing bowl, combine the sourdough discard with flour, softened butter, sugar, and salt. Mix until a shaggy dough forms.
  2. Turn the dough onto a lightly floured surface and knead for about 5-7 minutes, until smooth and elastic.
  3. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rest for about 1 hour, or until it has doubled in size.
  4. After resting, roll the dough out on a floured surface into a rectangle about 1/4 inch thick.
  5. In a small bowl, mix the sugar and cinnamon.
  6. Spread softened butter over the rolled-out dough, then sprinkle the cinnamon sugar mixture evenly over the top.
  7. Cut the dough into long strips, then twist each strip to form a spiral, pinching the ends to seal.
  8. Place the twists on parchment-lined baking sheets. Cover with a cloth and let them rise for another 30 minutes.
  9. Preheat the oven to 375°F (190°C). Brush with egg wash, sprinkle a bit more sugar if desired, and bake for 15-20 minutes or until golden brown.
  10. Let them cool slightly, then enjoy warm!

Notes

For an extra crispy exterior, place a pan of water at the bottom of your oven to create steam.
