Description

Delicious bites made from sourdough discard, coated in cinnamon sugar for a sweet and tangy treat.


Ingredients

  • 1 1/2 cups sourdough starter discard (room temperature)
  • 1 1/2 cups all-purpose flour (or half whole wheat)
  • 1/4 cup granulated sugar (plus more for coating)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk (dairy or plant-based)
  • 1 large egg (or egg replacer for vegan)
  • 2 tablespoons melted butter (plus extra for coating)
  • Neutral oil for frying (vegetable, canola, or sunflower)

Instructions

  1. Whisk together the sourdough discard, milk, egg, melted butter, and granulated sugar until smooth.
  2. Sift the flour, baking powder, salt, and cinnamon into the wet mix and fold gently until a soft batter forms.
  3. Heat oil in a pot until it reaches medium-high heat.
  4. Prepare a bowl with sugar and cinnamon for coating.
  5. Spoon small tablespoons of batter into the oil and fry until golden brown, flipping as needed.
  6. Remove bites and toss in the sugar-cinnamon mixture while warm.
  7. If baking, pipe or drop batter onto a lined baking sheet and bake at 375°F until golden.

Notes

For a lighter crunch, use superfine sugar in the coating. Adjustments may be needed for gluten-free versions.
