- 1 large egg (or flax egg for vegan option)
- 1 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and sugars in a bowl until fluffy, about 3-4 minutes.
- Add the mashed sweet potatoes and the egg (or flax egg) to the mixture, stirring until combined.
- In another bowl, whisk together the flour, baking soda, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips gently.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving adequate space between cookies.
- Bake for 12-15 minutes until edges are lightly golden and centers remain soft.
- Allow to cool slightly on the baking sheet before transferring to a wire rack.
Notes
For extra flavor, add a pinch of sea salt on top of each cookie before baking.
