Description

Delightful cookies that combine the sweetness of sweet potatoes with rich chocolate chips, creating a moist and tender treat.


Ingredients

  • 1 cup mashed, cooked sweet potatoes (about 1 medium sweet potato)
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup brown sugar (or coconut sugar)
  • 1/2 cup butter (or coconut oil for dairy-free)
  • 1 large egg (or flax egg for vegan option)
  • 1 cup chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter and sugars in a bowl until fluffy, about 3-4 minutes.
  3. Add the mashed sweet potatoes and the egg (or flax egg) to the mixture, stirring until combined.
  4. In another bowl, whisk together the flour, baking soda, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips gently.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving adequate space between cookies.
  8. Bake for 12-15 minutes until edges are lightly golden and centers remain soft.
  9. Allow to cool slightly on the baking sheet before transferring to a wire rack.

Notes

For extra flavor, add a pinch of sea salt on top of each cookie before baking.
