Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, mash 3 ripe bananas until smooth, leaving some lumps for texture.
- Stir in 1/2 cup melted unsalted butter and 1 cup of sugar until well combined.
- Beat in 1 egg, then mix in 1 teaspoon of vanilla extract and 1/4 cup of milk until blended.
- In another bowl, whisk together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
- Gradually combine the wet and dry ingredients, stirring gently to avoid overmixing.
- If desired, fold in 1/2 cup of chocolate chips or walnuts.
- Divide the batter among muffin cups, filling each about two-thirds full.
- Bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
