Description

Deliciously soft and fluffy banana muffins, perfect for breakfast or snacks, filled with sweet banana flavor and optional chocolate chips or nuts.


Ingredients

  • 3 ripe bananas
  • 1/2 cup unsalted butter (melted or oil)
  • 1 cup granulated sugar or brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup chocolate chips or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, mash 3 ripe bananas until smooth, leaving some lumps for texture.
  3. Stir in 1/2 cup melted unsalted butter and 1 cup of sugar until well combined.
  4. Beat in 1 egg, then mix in 1 teaspoon of vanilla extract and 1/4 cup of milk until blended.
  5. In another bowl, whisk together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
  6. Gradually combine the wet and dry ingredients, stirring gently to avoid overmixing.
  7. If desired, fold in 1/2 cup of chocolate chips or walnuts.
  8. Divide the batter among muffin cups, filling each about two-thirds full.
  9. Bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick comes out clean.
  10. Let cool in the pan for a few minutes before transferring to a wire rack.
