- 1 cup apple cider
- 2 ½ cups all-purpose flour
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ½ tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the mixture and mix until just combined.
- Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
- Slowly pour in the apple cider, mixing until the dough comes together smoothly.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
For added flavor, sprinkle coarse sea salt on top after baking.
