Delicious soft cookies infused with apple cider and warm spices like cinnamon and nutmeg.


Ingredients

  • 1 cup apple cider
  • 2 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the mixture and mix until just combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  6. Slowly pour in the apple cider, mixing until the dough comes together smoothly.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For added flavor, sprinkle coarse sea salt on top after baking.
