Ingredients

- 8 oz soba noodles
- 1 bell pepper, sliced
- 1 cucumber, sliced
- 1 carrot, sliced
- 1/4 cup tahini
- 2 tbsp miso paste
- 2 tbsp soy sauce
- Juice of 1 lemon
- Drizzle of sesame oil
- Salt and pepper to taste
- Fresh chopped scallions
- Sesame seeds for garnish
Instructions
- Cook soba noodles in a pot of salted boiling water for 4-5 minutes until al dente. Drain and rinse under cold water.
- In a bowl, whisk together tahini, miso, soy sauce, lemon juice, and sesame oil. Thin with water to achieve a creamy consistency.
- Slice vegetables into thin matchstick pieces.
- Toss the cooled soba noodles with chopped vegetables and tahini miso dressing in a large bowl.
- Garnish with chopped scallions and sesame seeds.
- Chill in the refrigerator for at least 30 minutes before serving.
- Enjoy as a light lunch or side dish.
Notes
Be careful not to overcook the soba noodles. Letting the salad sit helps the flavors meld together beautifully.
