A delightful and refreshing Soba Noodle Picnic Salad with creamy tahini miso dressing, perfect for summer outings and family gatherings.


Ingredients

  • 8 oz soba noodles
  • 1 bell pepper, sliced
  • 1 cucumber, sliced
  • 1 carrot, sliced
  • 1/4 cup tahini
  • 2 tbsp miso paste
  • 2 tbsp soy sauce
  • Juice of 1 lemon
  • Drizzle of sesame oil
  • Salt and pepper to taste
  • Fresh chopped scallions
  • Sesame seeds for garnish

Instructions

  1. Cook soba noodles in a pot of salted boiling water for 4-5 minutes until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together tahini, miso, soy sauce, lemon juice, and sesame oil. Thin with water to achieve a creamy consistency.
  3. Slice vegetables into thin matchstick pieces.
  4. Toss the cooled soba noodles with chopped vegetables and tahini miso dressing in a large bowl.
  5. Garnish with chopped scallions and sesame seeds.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Enjoy as a light lunch or side dish.

Notes

Be careful not to overcook the soba noodles. Letting the salad sit helps the flavors meld together beautifully.
