- 4 cups fresh broccoli, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1–2 cups shredded smoked Gouda cheese
- 2 tablespoons butter or olive oil
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Melt butter or olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until translucent, about 5 minutes.
- Add chopped broccoli (or cauliflower) and sauté for 3 minutes to soften.
- Pour in broth and bring to a gentle boil. Reduce heat and simmer for about 15 minutes, until broccoli is tender.
- Using an immersion blender, puree the soup until smooth. If using a traditional blender, let cool slightly before blending in batches.
- Return soup to low heat and stir in shredded smoked Gouda until melted and creamy.
- Season with salt, pepper, and fresh herbs. Serve in bowls, topped with extra Gouda or a drizzle of olive oil.
Notes
For a dairy-free option, substitute the cream with oat milk and use a dairy-free cheese alternative. Can be served in bread bowls for added presentation.
