Description

A comforting and creamy soup made with fresh broccoli and rich smoked Gouda cheese, perfect for chilly days.


Ingredients

  • 4 cups fresh broccoli, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 12 cups shredded smoked Gouda cheese
  • 2 tablespoons butter or olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Melt butter or olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until translucent, about 5 minutes.
  2. Add chopped broccoli (or cauliflower) and sauté for 3 minutes to soften.
  3. Pour in broth and bring to a gentle boil. Reduce heat and simmer for about 15 minutes, until broccoli is tender.
  4. Using an immersion blender, puree the soup until smooth. If using a traditional blender, let cool slightly before blending in batches.
  5. Return soup to low heat and stir in shredded smoked Gouda until melted and creamy.
  6. Season with salt, pepper, and fresh herbs. Serve in bowls, topped with extra Gouda or a drizzle of olive oil.

Notes

For a dairy-free option, substitute the cream with oat milk and use a dairy-free cheese alternative. Can be served in bread bowls for added presentation.
