Ingredients

- 2 cups Great Northern or cannellini beans, soaked overnight
- 1 ham hock or 2 cups diced leftover ham
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 2 teaspoons fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Optional: 2 cloves garlic, minced
- Optional: Crushed red pepper flakes
Instructions
- Soak the beans overnight, then drain and rinse.
- Chop the onions, carrots, and celery into a fine dice.
- In the slow cooker, layer the ham, soaked beans, vegetables, and garlic (if using).
- Add the broth, thyme, bay leaves, and season with salt and pepper.
- Cook on low for 6-8 hours or high for 4 hours, until beans are tender.
- Adjust seasonings to taste and serve with fresh parsley and crusty bread.
Notes
Brown the ham in a skillet for added flavor. Let the soup sit for 30 minutes before serving to enhance the flavors.
