A comforting and hearty slow cooker soup made with white beans, smoky ham, and fresh vegetables, perfect for family gatherings on chilly days.


Ingredients

  • 2 cups Great Northern or cannellini beans, soaked overnight
  • 1 ham hock or 2 cups diced leftover ham
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 2 teaspoons fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Optional: 2 cloves garlic, minced
  • Optional: Crushed red pepper flakes

Instructions

  1. Soak the beans overnight, then drain and rinse.
  2. Chop the onions, carrots, and celery into a fine dice.
  3. In the slow cooker, layer the ham, soaked beans, vegetables, and garlic (if using).
  4. Add the broth, thyme, bay leaves, and season with salt and pepper.
  5. Cook on low for 6-8 hours or high for 4 hours, until beans are tender.
  6. Adjust seasonings to taste and serve with fresh parsley and crusty bread.

Notes

Brown the ham in a skillet for added flavor. Let the soup sit for 30 minutes before serving to enhance the flavors.
