Description

A comforting dish of tender chicken simmered in a sweet and savory teriyaki sauce, perfect for busy weeknights.


Ingredients

  • 23 pounds boneless, skinless chicken thighs or breasts
  • 1/2 cup soy sauce (low-sodium if preferred)
  • 1/4 cup brown sugar
  • 2 tablespoons honey or maple syrup
  • 1/4 cup rice vinegar
  • 1 cup chicken broth
  • 2 tablespoons grated fresh ginger
  • 3 cloves minced garlic
  • 12 tablespoons cornstarch (for thickening)
  • 12 tablespoons sesame oil
  • Toasted sesame seeds for garnish
  • Sliced scallions for garnish
  • Optional: mushrooms (shiitake or cremini), red pepper flakes, or a splash of mirin

Instructions

  1. Whisk together the teriyaki sauce ingredients in a bowl.
  2. Place the chicken in the slow cooker and pour the sauce over it.
  3. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours.
  4. Remove chicken, shred it, then strain the cooking liquid.
  5. Simmer the liquid and whisk in cornstarch to thicken.
  6. Return the shredded chicken to the sauce along with sesame oil and garnish before serving.

Notes

For best results, use chicken thighs for tenderness. Adjust sweetness and saltiness of the sauce to taste. Reserve some sauce for serving for added moisture.
