Ingredients

- 3 lbs pork shoulder or butt
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 2 tsp cumin
- 2 tsp paprika
- 1 lime or orange, juiced
- 1 cup chicken broth
- Salt and black pepper to taste
Instructions
- Cut the pork into large chunks (about 2-3 inches). Season with salt, cumin, paprika, and black pepper.
- If desired, sear the pork in a skillet for extra flavor, then transfer to slow cooker.
- Layer the chopped onion, garlic, and cilantro over the pork. Squeeze lime or orange juice and pour in chicken broth.
- Cook on low for 8 hours or high for 4 hours.
- Remove pork, shred with two forks, and allow to rest.
- For crispy edges, spread shredded pork on a baking sheet and broil for a few minutes.
- Serve with warm tortillas and toppings.
Notes
For a lighter option, consider using pork loin. For a vegetarian version, try jackfruit instead of pork.
