Ingredients
- Fresh salmon fillets (skinless)
- Raw shrimp, peeled and deveined
- Fresh herbs (dill, parsley, or chives)
- Cream cheese or mascarpone
- Earthy mushrooms (shiitake or button)
- Aromatics—garlic and onion
- Seasonings—salt, pepper, and lemon juice
Instructions
- Preheat your oven to 375°F (190°C). Slice a pocket into each salmon fillet without going all the way through.
- In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until caramelized and fragrant.
- Add diced mushrooms and cook until tender. Fold in shrimp and herbs, cooking until shrimp turns pink (2-3 minutes). Let the mixture cool, then stir in cream cheese.
- Spoon the shrimp mixture into the salmon pockets and press to seal. Season with salt, pepper, and lemon juice.
- Place the stuffed salmon in a greased baking dish and bake for 15-20 minutes until flaky and fully cooked.
- Garnish with herbs and serve with a salad or roasted vegetables.
