A comforting family classic that combines the rich flavors of salmon and shrimp, stuffed with herbs and cream cheese for a delightful meal.


Ingredients

  • Fresh salmon fillets (skinless)
  • Raw shrimp, peeled and deveined
  • Fresh herbs (dill, parsley, or chives)
  • Cream cheese or mascarpone
  • Earthy mushrooms (shiitake or button)
  • Aromatics—garlic and onion
  • Seasonings—salt, pepper, and lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Slice a pocket into each salmon fillet without going all the way through.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until caramelized and fragrant.
  3. Add diced mushrooms and cook until tender. Fold in shrimp and herbs, cooking until shrimp turns pink (2-3 minutes). Let the mixture cool, then stir in cream cheese.
  4. Spoon the shrimp mixture into the salmon pockets and press to seal. Season with salt, pepper, and lemon juice.
  5. Place the stuffed salmon in a greased baking dish and bake for 15-20 minutes until flaky and fully cooked.
  6. Garnish with herbs and serve with a salad or roasted vegetables.
