Description

Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 1 cup jasmine or basmati rice
  • 3 cloves garlic (minced)
  • 2 tablespoons butter (or olive oil)
  • Fresh herbs (like parsley or cilantro)
  • Vegetables (bell peppers, peas, or your choice)
  • 2 cups broth (chicken or vegetable)
  • 2 tablespoons citrus juice (lemon or lime)

Instructions

  1. Rinse 1 cup of rice under cold water until the water runs clear.
  2. Add the rice to a pot with 2 cups of broth and bring to a boil.
  3. Lower the heat, cover, and simmer for about 15-20 minutes until fluffy.
  4. In a skillet, melt 2 tablespoons of butter over medium heat.
  5. Add minced garlic and stir until fragrant.
  6. Toss in the shrimp and cook for about 2-3 minutes until they turn pink.
  7. Add chopped vegetables and cook for an additional 3-5 minutes until tender.
  8. Fluff the cooked rice and layer it generously in bowls.
  9. Top with the shrimp mixture, fresh herbs, and a squeeze of citrus juice.
  10. Serve immediately, perhaps with a side of crunchy vegetables.
