A comforting sausage and egg casserole perfect for family gatherings and brunch.
Ingredients

- 1 lb breakfast sausage (or turkey/plant-based alternative)
- 6 to 8 large eggs
- 1 cup milk or cream
- 1 cup shredded cheddar cheese
- 4 cups day-old bread or croissants
- 1 cup chopped vegetables (onions, bell peppers, mushrooms)
- Salt and pepper to taste
- Dried herbs (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the sausage in a large skillet over medium heat, then remove from heat.
- Whisk together the eggs and milk in a large bowl, adding salt, pepper, and dried herbs.
- Fold the browned sausage and chopped vegetables into the egg mixture, along with half the cheese.
- Layer the torn bread in a greased casserole dish and pour the egg mixture over it.
- Top with the remaining cheese and bake for 30-35 minutes or until golden brown and set.
- Let cool for a few minutes before serving.
Notes
For added nutrition, feel free to include spinach or kale. Serve with fresh fruit or a green salad.
