Description

A comforting sausage and egg casserole perfect for family gatherings and brunch.


Ingredients

  • 1 lb breakfast sausage (or turkey/plant-based alternative)
  • 6 to 8 large eggs
  • 1 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 4 cups day-old bread or croissants
  • 1 cup chopped vegetables (onions, bell peppers, mushrooms)
  • Salt and pepper to taste
  • Dried herbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the sausage in a large skillet over medium heat, then remove from heat.
  3. Whisk together the eggs and milk in a large bowl, adding salt, pepper, and dried herbs.
  4. Fold the browned sausage and chopped vegetables into the egg mixture, along with half the cheese.
  5. Layer the torn bread in a greased casserole dish and pour the egg mixture over it.
  6. Top with the remaining cheese and bake for 30-35 minutes or until golden brown and set.
  7. Let cool for a few minutes before serving.

Notes

For added nutrition, feel free to include spinach or kale. Serve with fresh fruit or a green salad.
