Description

A whimsical combination of fluffy pancakes and savory sausage, perfect for breakfast or brunch.


Ingredients

  • 1 cup pancake mix
  • 1 large egg
  • 1 cup milk (whole or buttermilk)
  • 1/2 pound sausage (links or ground)
  • Fresh sage or thyme, to taste
  • Butter or sausage drippings, for cooking
  • Maple syrup, for serving

Instructions

  1. In a mixing bowl, combine pancake mix, egg, and milk; whisk until smooth. Fold in fresh herbs if desired.
  2. In a skillet, cook the sausage over medium heat until browned and crispy, about 5-8 minutes. Slice after cooking if using links.
  3. Heat a little butter or sausage drippings on a griddle over medium heat.
  4. Ladle batter onto the griddle to form pancakes, cooking until bubbles form on the surface, about 3-4 minutes per side.
  5. Serve warm with sausage on the side or nestled in pancakes, drizzled with maple syrup.

Notes
