- 1 lb ground beef (or turkey)
- 1 can black beans
- 1 can kidney beans
- 1 can diced tomatoes with green chilies
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves fresh garlic, minced
- 2 tsp chili powder
- 2 tsp cumin
- 4 cups vegetable or beef broth
- Tortilla chips
- Shredded cheese for garnish
- Cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onions and bell peppers, cooking until soft—about 5 minutes.
- Push the veggies aside, add the ground beef (or turkey) to the skillet, and cook until browned, seasoning with salt, pepper, and garlic.
- Stir in the chili powder and cumin to coat the meat and vegetables.
- Combine canned tomatoes, beans, and broth; bring to a gentle simmer and let bubble for about 20 minutes.
- Taste and adjust seasonings as needed.
- Ladle the soup into bowls and top with shredded cheese, cilantro, and tortilla strips.
Notes
Customize the heat with jalapeños or cool it down with sour cream. Great with cornbread or rice!
