Description

A delightful dessert combining the cozy essence of apple pie with the creamy indulgence of cheesecake, topped with rich salted caramel.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons melted butter
  • ¼ cup sugar
  • 3 cups Granny Smith apples, peeled and sliced
  • 2 tablespoons butter
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 cup sugar (for caramel)
  • 6 tablespoons butter (for caramel)
  • ½ cup cream
  • Sea salt, to taste

Instructions

  1. Preheat your oven to 325°F (165°C) and prepare a springform pan with parchment paper and a light spray of oil.
  2. Combine graham cracker crumbs, melted butter, and sugar; press into the bottom of the pan. Bake for 10 minutes and let cool.
  3. Sauté apples with butter, sugar, cinnamon, and nutmeg until soft. Cool before adding to filling.
  4. Blend cream cheese, sugar, and vanilla until smooth. Add eggs one at a time and fold in sautéed apples.
  5. Pour the filling over the crust and bake for 50-60 minutes until set with a slight jiggle in the center. Cool completely.
  6. For the caramel, melt sugar in a saucepan until golden. Add butter, then slowly pour in cream. Sprinkle with sea salt and drizzle over the cheesecake.

Notes

Allow the cheesecake to cool slowly in the oven with the door slightly ajar to prevent cracking. Serve chilled with garnishes of apple slices or cinnamon.
