Ingredients

  • 2 fresh salmon fillets
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh dill
  • 1/4 cup fresh parsley
  • 1/4 cup walnuts or sesame seeds
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Season the salmon fillets with olive oil, salt, and pepper. Bake for about 12-15 minutes or until the salmon flakes easily with a fork.
  2. While the salmon cooks, wash and chop your greens. Halve the cherry tomatoes, dice the cucumber, and slice the avocados.
  3. Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl for the dressing.
  4. Once the salmon has cooled slightly, flake it into large pieces. In a large bowl, toss the greens, veggies, and flaked salmon together. Drizzle with the dressing and toss gently to coat everything evenly.
  5. Plate the salad and garnish with fresh herbs, a sprinkle of nuts or seeds, and extra lemon wedges. Enjoy immediately.
