- 2 fresh salmon fillets
- 4 cups mixed greens (arugula, spinach, romaine)
- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup fresh dill
- 1/4 cup fresh parsley
- 1/4 cup walnuts or sesame seeds
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Season the salmon fillets with olive oil, salt, and pepper. Bake for about 12-15 minutes or until the salmon flakes easily with a fork.
- While the salmon cooks, wash and chop your greens. Halve the cherry tomatoes, dice the cucumber, and slice the avocados.
- Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl for the dressing.
- Once the salmon has cooled slightly, flake it into large pieces. In a large bowl, toss the greens, veggies, and flaked salmon together. Drizzle with the dressing and toss gently to coat everything evenly.
- Plate the salad and garnish with fresh herbs, a sprinkle of nuts or seeds, and extra lemon wedges. Enjoy immediately.
