- 1 pound fresh salmon fillet
- 12 oz fettuccine or linguine
- 1 cup heavy cream
- Zest and juice from 1 fresh lemon
- 2 tablespoons olive oil
- 2 cloves fresh garlic, minced
- 1 cup sautéed mushrooms (cremini or shiitake)
- Fresh herbs (parsley or dill for garnish)
- Salt and pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve about a cup of the pasta water, then drain and set aside.
- Sear the Salmon: Heat olive oil in a large skillet over medium heat. Pat the salmon dry, season with salt and pepper, and cook skin-side down for 4-5 minutes on each side until flaky. Remove and set aside.
- Create the Sauce: In the same skillet, sauté minced garlic until fragrant, about 30 seconds. Pour in the heavy cream, stir, and scrape up any bits from the pan. Add the lemon juice and zest.
- Combine Everything: Flake the salmon into bite-sized pieces and return to the skillet. Add the cooked pasta, and use reserved pasta water to adjust sauce thickness. Mix in sautéed mushrooms.
- Plate and Serve: Serve the pasta in bowls, garnished with fresh herbs and extra lemon zest.
