Description

A delicious and nutritious roasted whole cauliflower with a crispy outer layer and tender buttery core, perfect for family gatherings.


Ingredients

Scale
  • 1 large head of cauliflower
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika (smoked or sweet)
  • Salt and pepper to taste
  • Fresh herbs like thyme or rosemary (optional)
  • Parmesan cheese or nutritional yeast for a vegan option (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Prepare the cauliflower by rinsing and trimming the leaves while keeping the core intact.
  3. In a bowl, mix olive oil, minced garlic, paprika, salt, and pepper. Rub this mixture all over the cauliflower.
  4. Place on a baking sheet lined with parchment paper and roast for 45-55 minutes until golden and easily pierced with a knife.
  5. If desired, add parmesan cheese or nutritional yeast during the last 10 minutes of roasting.
  6. Once out of the oven, cool for a few minutes, then slice or serve whole. Drizzle with lemon juice or tahini sauce before serving.

Notes

For deeper color and flavor, roast a little longer. Experiment with different oils for varied flavors.
