Ingredients

- 1 large head of cauliflower
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika (smoked or sweet)
- Salt and pepper to taste
- Fresh herbs like thyme or rosemary (optional)
- Parmesan cheese or nutritional yeast for a vegan option (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Prepare the cauliflower by rinsing and trimming the leaves while keeping the core intact.
- In a bowl, mix olive oil, minced garlic, paprika, salt, and pepper. Rub this mixture all over the cauliflower.
- Place on a baking sheet lined with parchment paper and roast for 45-55 minutes until golden and easily pierced with a knife.
- If desired, add parmesan cheese or nutritional yeast during the last 10 minutes of roasting.
- Once out of the oven, cool for a few minutes, then slice or serve whole. Drizzle with lemon juice or tahini sauce before serving.
Notes
For deeper color and flavor, roast a little longer. Experiment with different oils for varied flavors.
