Description

Layers of thinly sliced potatoes infused with roasted garlic and Parmesan, creating a crispy yet tender side dish that’s perfect for any occasion.


Ingredients

  • Yukon Gold potatoes (or russets)
  • 1 bulb of fresh garlic
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh thyme or rosemary (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare garlic: Cut the top off a bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
  3. Thinly slice potatoes to about 1/8 inch thick using a mandoline.
  4. Mix olive oil, minced roasted garlic, salt, pepper, and herbs in a bowl; toss potato slices in the mixture.
  5. Layer the potato slices in a muffin tin or on a baking sheet, alternating layers with Parmesan.
  6. Bake for 25-30 minutes until edges are golden and cheese is bubbling.
  7. Let cool slightly, garnish with herbs and more Parmesan, and serve.

Notes

Using a muffin tin helps to retain the shape of stacks and creates individual servings.
