Ingredients

- Yukon Gold potatoes (or russets)
- 1 bulb of fresh garlic
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh thyme or rosemary (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Prepare garlic: Cut the top off a bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
- Thinly slice potatoes to about 1/8 inch thick using a mandoline.
- Mix olive oil, minced roasted garlic, salt, pepper, and herbs in a bowl; toss potato slices in the mixture.
- Layer the potato slices in a muffin tin or on a baking sheet, alternating layers with Parmesan.
- Bake for 25-30 minutes until edges are golden and cheese is bubbling.
- Let cool slightly, garnish with herbs and more Parmesan, and serve.
