Description

Comforting lasagna roll-ups filled with roasted garlic, butternut squash, and rich cheese, perfect for family gatherings.


Ingredients

  • Fresh lasagna noodles (or gluten-free pasta)
  • 1 medium butternut squash, peeled, seeded, and cubed
  • Whole cloves of garlic, roasted
  • 15 oz ricotta cheese (or cottage cheese)
  • 2 cups fresh spinach or kale
  • 2 cups shredded mozzarella cheese
  • Fresh herbs (sage, thyme)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the butternut squash and garlic with olive oil, salt, and pepper, then roast for 30-35 minutes until tender.
  3. Cool garlic slightly, then squeeze out cloves into a mixing bowl. Mash with the roasted butternut squash. Stir in ricotta, spinach, and herbs; season with salt and pepper.
  4. Cook lasagna noodles until al dente; drain and lay flat on a towel.
  5. Grease a baking dish with olive oil. Spread marinara sauce on the bottom.
  6. Fill each noodle with squash filling, roll up, and place seam-side down in the baking dish.
  7. Pour marinara sauce over roll-ups and sprinkle with mozzarella. Bake for 25-30 minutes until bubbly and golden.
  8. Cool slightly before serving.

Notes

For added flavor, drizzle with extra virgin olive oil or sprinkle with Parmesan cheese just before serving.
