Ingredients

- Fresh lasagna noodles (or gluten-free pasta)
- 1 medium butternut squash, peeled, seeded, and cubed
- Whole cloves of garlic, roasted
- 15 oz ricotta cheese (or cottage cheese)
- 2 cups fresh spinach or kale
- 2 cups shredded mozzarella cheese
- Fresh herbs (sage, thyme)
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 cups marinara sauce
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the butternut squash and garlic with olive oil, salt, and pepper, then roast for 30-35 minutes until tender.
- Cool garlic slightly, then squeeze out cloves into a mixing bowl. Mash with the roasted butternut squash. Stir in ricotta, spinach, and herbs; season with salt and pepper.
- Cook lasagna noodles until al dente; drain and lay flat on a towel.
- Grease a baking dish with olive oil. Spread marinara sauce on the bottom.
- Fill each noodle with squash filling, roll up, and place seam-side down in the baking dish.
- Pour marinara sauce over roll-ups and sprinkle with mozzarella. Bake for 25-30 minutes until bubbly and golden.
- Cool slightly before serving.
Notes
For added flavor, drizzle with extra virgin olive oil or sprinkle with Parmesan cheese just before serving.
