Ingredients

  • 1 cup uncooked rice (brown or white)
  • 2 cups broccoli florets, steamed or sautéed
  • 2 tablespoons butter or olive oil
  • 3 cloves of garlic, minced
  • Salt and pepper to taste
  • Optional: a squeeze of lemon juice, grated Parmesan cheese, or your favorite herbs

Instructions

  1. Bring 2 cups of water to a boil in a medium pot. Add a pinch of salt and stir in the rice. Cover, reduce heat to low, and simmer until the water is absorbed (about 18-20 minutes for white rice, or 45 minutes for brown rice).
  2. While the rice cooks, prepare the broccoli. If using fresh, bring a pot of water to boil and blanch the florets for 2-3 minutes until tender and bright green. Drain and set aside.
  3. In a skillet, heat butter or olive oil over medium heat. Add the minced garlic and sauté until golden, about 1 minute. Be careful not to burn it.
  4. Add the cooked rice and broccoli to the skillet, stirring to combine. Season with salt, pepper, and any additional herbs or lemon juice you desire.
  5. Cook for another 3-5 minutes, allowing the flavors to meld before serving.

Notes

For a twist, consider adding roasted nuts or seeds for extra crunch. This dish pairs well with grilled proteins or can be enjoyed by itself.
