- 1 cup uncooked rice (brown or white)
- 2 cups broccoli florets, steamed or sautéed
- 2 tablespoons butter or olive oil
- 3 cloves of garlic, minced
- Salt and pepper to taste
- Optional: a squeeze of lemon juice, grated Parmesan cheese, or your favorite herbs
Instructions
- Bring 2 cups of water to a boil in a medium pot. Add a pinch of salt and stir in the rice. Cover, reduce heat to low, and simmer until the water is absorbed (about 18-20 minutes for white rice, or 45 minutes for brown rice).
- While the rice cooks, prepare the broccoli. If using fresh, bring a pot of water to boil and blanch the florets for 2-3 minutes until tender and bright green. Drain and set aside.
- In a skillet, heat butter or olive oil over medium heat. Add the minced garlic and sauté until golden, about 1 minute. Be careful not to burn it.
- Add the cooked rice and broccoli to the skillet, stirring to combine. Season with salt, pepper, and any additional herbs or lemon juice you desire.
- Cook for another 3-5 minutes, allowing the flavors to meld before serving.
Notes
For a twist, consider adding roasted nuts or seeds for extra crunch. This dish pairs well with grilled proteins or can be enjoyed by itself.
