- 2 tablespoons oil
- 1 finely chopped onion
- 2 minced garlic cloves
- 1 diced fresh tomato
- 2 cups chicken or vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt to taste
- Fresh cilantro or parsley (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a skillet over medium heat, add oil and then sauté onion and garlic for about 3 minutes until fragrant.
- Add the diced tomato and cook down for 2-3 minutes.
- Stir in the rinsed rice and toast for 2-3 minutes until glossy.
- Pour in the broth, cumin, and chili powder; bring to a boil.
- Reduce heat, cover, and simmer for 18-20 minutes until rice is tender.
- Fluff with a fork and sprinkle with fresh herbs before serving.
Notes
Letting the rice sit covered for a few minutes after cooking enhances the final texture.
