Description

Ingredients

  • 1 cup long-grain white rice, rinsed
  • 2 tablespoons oil
  • 1 finely chopped onion
  • 2 minced garlic cloves
  • 1 diced fresh tomato
  • 2 cups chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro or parsley (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a skillet over medium heat, add oil and then sauté onion and garlic for about 3 minutes until fragrant.
  3. Add the diced tomato and cook down for 2-3 minutes.
  4. Stir in the rinsed rice and toast for 2-3 minutes until glossy.
  5. Pour in the broth, cumin, and chili powder; bring to a boil.
  6. Reduce heat, cover, and simmer for 18-20 minutes until rice is tender.
  7. Fluff with a fork and sprinkle with fresh herbs before serving.

Notes

Letting the rice sit covered for a few minutes after cooking enhances the final texture.
