A light and refreshing mocktail combining crisp cucumber and bright mint with a citrusy kick, perfect for summer gatherings.
Ingredients

- 1 medium English cucumber, sliced
- 10–12 fresh mint leaves, plus extra for garnish
- 2 tablespoons fresh lime juice (about 1 lime)
- 1–2 tablespoons simple syrup, to taste
- 1½ cups sparkling water or club soda, chilled
- Ice cubes
- Optional: a pinch of sea salt or a slice of jalapeño for heat
Instructions
- Prepare the cucumber: wash and slice the cucumber into coins, then reserve a few thin slices for garnish. Roughly chop the rest.
- Muddle the base: place the chopped cucumber and mint leaves in a sturdy glass or cocktail shaker, and add the lime juice and simple syrup. Gently muddle with a wooden muddler or the back of a spoon.
- Strain and combine: strain the muddled mixture through a fine sieve into a pitcher or serving glass, pressing the solids to extract as much liquid as you like. Discard the pulp.
- Build the drink: add ice to your serving glasses, pour the cucumber-mint concentrate over the ice, and top each glass with sparkling water. Stir gently to combine.
- Garnish and serve: float a cucumber ribbon and a sprig of mint on top, and add a tiny pinch of sea salt if desired. Serve immediately.
Notes
For a smoother texture, blend the cucumber and mint with a small amount of water, then strain the puree. Chill all components beforehand for best results.
