Ingredients

- 2 Fresh Cucumbers, peeled and diced
- 4 Lemons, juiced (about 1 cup)
- 4 cups Water (still or sparkling)
- Sweetener to taste (Honey, Agave Nectar, or Simple Syrup)
- A pinch of Salt (optional)
- Fresh Mint or Basil (optional, for garnish)
Instructions
- Wash and peel the cucumbers if desired, then dice them into smaller pieces.
- Juice the lemons, aiming for about one cup of fresh lemon juice.
- In a blender, combine the diced cucumbers and half the water, then blend until smooth. Strain the mixture into a pitcher.
- Add the lemon juice and remaining water to the cucumber juice. Adjust sweetness with honey or desired sweetener.
- Refrigerate for at least an hour. Serve over ice, garnished with cucumber or lemon slices.
Notes
For a sparkling twist, top each glass with sparkling water just before serving. Avoid over-sweetening by starting with less sweetener and adding more if needed.
