Ingredients

  • 1 tsp baking soda
  • 1 cup granulated sugar
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • Optional: dark chocolate chips, almond extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheet with parchment paper.
  3. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. In a stand mixer, beat the unsalted butter and sugar until light and fluffy, about 3-4 minutes.
  5. Add the eggs one at a time, mixing well after each addition, then add vanilla (and almond extract if using).
  6. Gradually mix in the dry ingredients until just combined.
  7. Fold in the buttermilk until you have a smooth, slightly thick dough.
  8. Use a cookie scoop to portion dough onto the lined baking sheet, spacing them at least 2 inches apart.
  9. Bake for about 10-12 minutes; 5 minutes before done, tap the baking sheet against the counter.
  10. Cool on the sheet for a couple of minutes before transferring to a wire rack.

Notes

For best results, avoid overmixing after adding flour and ensure all ingredients are at room temperature.
